Bsisa

In historic times, Bsisa was carried by travellers and nomads across North Africa, known to be nutritious and energy-rich enough to sustain them on long journeys.

A mixture of roasted cereals ground with coriander/fennel, Bsisa is mixed with light olive oil to make a rich paste. It's an ideal accompaniment to dates as a snack or at breakfast.

For enthusiasts, our Bsisa uses a local recipe from the city of Zwara - a particularly popular one consisting of chickpeas, green lentils, fennel seeds, wheat and turmeric.
